Makes: 24 cupcakes
Ingredients:
Cupcakes:
1. 1 1/2 cups of self raising
2. 1 1/4 cups of plain flour
3. 1 cup of butter
4. 2 cups of granulated sugar
5. 4 large eggs
6. 1 cup of milk
7. 1 teaspoon of vanilla extract
Buttercream frosting :
1. 2 teaspoons of vanilla extract
2. 1/3 of a cup of milk - Optional
3. 4 cups of icing sugar
4. 1 1/2 cups of butter
5. red, yellow and pink food colouring
Directions:
1. Pre heat your oven at 180 degrees celsius and line your cupcake trays with your cases.
2. Add all the dry ingredients to one bowl then set aside.
3. In a large bowl cream your butter with an electric mixer until smooth and lightly coloured. Add the sugar gradually and beat until fluffy. Do this for around 3 minutes. Add the eggs one at a time, beating well after every addition.
4. Add dry ingredients in 3 parts, alternate between milk and vanilla each time. until fully combined and smooth, use a spatula to scrape down the sides to make sure the ingredients are well blended.
5. Divide the batter into the cupcake liners, filling them around 3/4 full. Bake for around 20 minutes or until cupcakes spring back when touched.
6. Cool cupcakes in the pans for 15 minutes before transferring over to a wire rack to cool completely.
Frosting time!
1. Cream your butter with an electric mixer until smooth and lightly coloured.
2. once done, add vanilla extract and icing sugar and mix until fully smooth and thick.
3. Add milk if your mixture seems to be too thick. If not continue to mix until fully blended.
4. Separate your mixture into 3 bowls and combine food colouring to two of the bowls provided. i used red and yellow to make a pastel orange and used a pink colouring to make pastel pink. I left my last bowl white and the effect looked amazing.
5. once combined using a piping bag spoon one of your colours to one side and spoon another colour to the other side of the bag. Using a formac -9 star nozzle pipe your mixture onto the cupcakes going around in a circle until fully covered. It should have an ombre effect with the 2 different colours.
6. Once all your cupcakes are done you can put them in the fridge for the icing to set or you can eat the right away!

Thank you for reading and I really hope you make these as they are amazing! See you next time. xx
